Kale Salad With Green Goddess Dressing
Green Goddess Dressing adapted from SAKARA LIFE
INGREDIENTS

4 loosely packed cups kale, de stemmed and cut into strips
½ avocado, sliced
½ cup chickpeas (or substitute with black beans or cannellini)
1 tablespoons seeds (flax, chia or sunflower)
½ cup radish, thinly sliced
GREEN GODDESS DRESSING

½ small shallot, sliced
1 clove garlic, minced
2 tsp rice vinegar
½ tablespoons lemon juice
6 basil leaves
6 mint leaves
8 sprigs cilantro
½ avocado, sliced
2 tablespoons extra virgin olive oil (EVOO)
½ teaspoon pink Himalayan salt

Drain cooked peas. If using uncooked peas, rinse and cook until tender. In a medium bowl, combine the kale, chickpeas, seeds, and radish.
For the green goddess dressing, blend the shallot, garlic, rice vinegar, lemon juice, basil, mint, avocado, EVVO and Himalayan salt until all ingredients are mixed smoothly.
Spread the salad on serving plate and drizzle dressing and top with sliced radish and Kale + Walnut Granola.
