Radicchio Galore Salad With Lemon Dressing
INGREDIENTS
Serves 2

4 cups of radicchio varieties (rosa del Veneto and Castelfranco) (remove into individual leaves)
½ cup cilantro
LEMON DRESSING
—
1 small lemon
1 teaspoon whole grain mustard
½ teaspoon coconut palm sugar
2 tablespoon extra virgin olive oil (EVOO)
Pink Himalayan salt and fresh ground black pepper to taste
DIRECTIONS

Soak radicchio in cold water for 15 minutes to curb the bitter taste. Drain well and spin dry in salad spinner.
Lemon Dressing: Place lemon, whole grain mustard, sugar and olive oil in mixing bowl and whisk to blend well.
Place radicchio on serving plate and top with lemon dressing. Optional toppings: Kale+Walnut Granola, Savory Spice Granola
